Meatballs in Tomato Sauce (Ballekes in tomatensaus). Belgian cuisine

500 gr. minced beef
3 eggs
3 tbsp. of breadcrumbs
500 ml beef stock
1 onion
3 tomatoes
2 tbsp. of flour
Black pepper

Preparation and serving:
Put together the mince, 1 egg, breadcrumbs and some pepper and salt and mix it well. Form meatballs with the size of ping-pong balls. Bring 2 l of water to the boil and cook the meatballs for 5 min. Pour through a colander, but save the water. Chop fine the onion, then fry it in a deep pan with a bit of oil and add the peeled and chopped tomatoes. Add 5 tbsp. of the water and bring to the boil. Leave it to simmer for 30 minutes. Thicken the sauce with the flour and season with pepper and salt. Add the meatballs and warm everything up. Hard boil the eggs and then slice.
Serve hot, arranged with the egg’s slices with baguette.
